Our online resource database will contain:

General overviews of the niche meat processing industry and market.
Detailed case studies of existing niche meat processors, including regulatory compliance overview, HACCP plan, SSOPs, plant design, business plan, costs/operating budget and labor management plan.
Narratives of successful outreach and extension projects.
Summaries with links and contact information for existing technical resources, focusing on at least the following five key areas:
1. Regulations: understanding and complying
2. Labor: finding and retaining capable and willing employees
3. Business planning and management
4. Communication skills with customers and regulators
5. Financial capital
